Fresh Abalone:About 180 grams of live South African abalone is used and stewed with kelp to allow the abalone to absorb the delicious seafood flavor. It is then served with truffle, port wine, scallop and chicken sauce cream sauce. The taste is chewy and delicate, perfectly showing the layered aesthetics of the fusion of abalone and sauce.
